Dorso Rosso

PRODUCTION AREA

The Dorso Rosso vineyards owned by Cantine Paololeo are located in the countryside of San Donaci (BR), exactly in the “Carritelli” district.

VIGNETI

Bush vine dating back to 1965.

CULTIVATION METHOD

Old vineyards grown by the traditional “Apulian bush vine” method; the plant always reaches the maximum height of 40-60 cm, in this way the vine optimally exploits the resources available in the soil, both water and nutrients. few buds on the plant, from 6 to 8, to ensure an high-quality production.

HARVEST

Manual harvest in 5 kg crates; the winemaker waits for the most favorable climatic conditions by waiting for the natural drying of the grapes by the sun; the bunches are thus left to overripe on the plant until they lose the right content of water and yield but which will guarantee a higher concentration of sugars.

VINIFICATION

The harvest is done by hand in the early hours of dawn. The liquid is left to macerate in contact with the skins for 12/15 days, after frequent pumping over the soft pressing takes place. Thermo-controlled fermentation is done at 25 ° C.

AGEING PROCESS

3 months in stainless-steel vessels, 18 months in french and American oak Tonneaux and 3 months in bottle.

NOTE DI DEGUSTAZIONE

Brillante ed intenso colore rosso rubino con sfumature granate. Bouquet complesso e speziato, con sentori di pepe, ribes e tabacco. Al palato sorprendono i suoi tannini morbidi e l’acidità perfettamente bilanciata, il finale è lungo e persistente.
Suggerito su ragù di carne, arrosti e formaggi stagionati.
